One day left!!

There is only 26 hours until our annual Octoberfest here at Doe. That means you have 26 hours to find the perfect costume...the costume that employees will be telling their grand kids about. The costume that will cause an uproar of laughter by your department and make your boss remember why they hired such a creative person.

Prizes will be handed out for the best costumes (1st, 2nd and 3rd places) and the prizes aren't lame...you'll want to win. Trust us! We have sharp and creative minds in this building...what better way to show everyone just how awesome you are. Dress up and make everyone jealous they didn't have your idea.

Can't wait to see what everyone wears tomorrow...and none of this "I dressed up like an Account Manager" or "I dressed up like a normal person" stuff...go all out. After all, when is the last time you came into work dressed in black tights and wings? Well don't ask Hoon...I heard he did that just last week.

Make something new this month!

Did your grandmother ever make a special dish during the Fall season that you wish you could recreate today? Did your uncle ever let you sneak a sip of something that your parents didn't want you drinking? Well below are some recipes that you can make and share with your grandchildren, nieces and nephews, kids, spouses and friends. Start a new recipe book for the Fall and Winter seasons and be sure to have these goodies written down...

Witch’s Brew
Ingredients
•2 cups Apple Cider
•2 cups Vanilla ice cream
•2 tablespoons Honey
•1/2 teaspoons ground cinnamon
•1/4 teaspoon ground nutmeg

Directions:
Process cider, ice cream, honey, cinnamon and nutmeg in food processor or blender until smooth. Pour into glasses and sprinkle additional nutmeg.
Serve immediately. Makes 4 servings each 6 ounces.

Caramel Popcorn Balls
Ingredients
5 tablespoons vegetable oil
2 1/2 cups unpopped popcorn
1/4 cup butter
1 cup packed light brown sugar
1/2 cup light corn syrup
2/3 cup sweetened condensed milk
1/2 teaspoon vanilla extract

Directions:
Add 1 tablespoon of the oil to a 4 quart saucepan, and heat over high heat. When oil is hot, add 1/2 cup of popping corn. Keep pan moving constantly. When corn stops popping, remove from heat. Place popped corn in oven to keep warm. Repeat until all corn has been popped. Set aside.
In a medium saucepan with a candy thermometer inserted, combine butter, sugar, and corn syrup. Stir well and bring to boiling over medium heat. Stir in condensed milk; simmer, stirring constantly, until thermometer reads 238 degrees F (114 degrees C). Stir in vanilla. Pour caramel over popped corn and stir to coat. Butter hands lightly; shape popcorn into balls about 3 1/2 inches in diameter.

Apple Brownies
Ingredients
1/2 cup butter, melted
1 cup white sugar
1 egg
3 medium apples - peeled, cored and thinly sliced
1/2 cup chopped walnuts
1 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon

Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
In a large bowl, beat together the melted butter, sugar, and egg until fluffy. Fold in the apples and walnuts. In a separate bowl, sift together the flour, salt, baking powder, baking soda, and cinnamon. Stir the flour mixture into the wet mixture until just blended. Spread the batter evenly in the prepared baking dish. Bake 35 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.
